La Altea Distillery was founded in 1937 by Don Felipe Camarena in the Los Altos highlands of Jalisco; his grandson Carlos Camarena now serves as master distiller. The production is stubbornly traditional: 100% estate grown blue agave, slow cooked in stone ovens, crushed by a traditional tahona wheel (fewer than 1% of tequila distilleries still use this method), fermented with wild yeast in open wood vats, and double
