A blend of equal parts Gewürztraminer and Pinot Gris from the biodynamic vineyards of the Humbrecht family in Alsace

It undergoes a wide filtration and is then bottled-aged until four years after the harvest

from biodynamic fruit sourced outside of Jasnières

Gravotte is aged around 6 months in used demi-muids and Burgundy barrels

Fruit from old vine parcels is hand harvested and fermented spontaneously with native yeasts, using gentle pump overs to preserve delicacy and freshness. The wine is then aged in a mix of neutral oak and large casks, bottled unfined and unfiltered with minimal sulfur.
