Karim and his family pioneered high altitude farming in La Consulta and by 2014 Karims idea became conventional wisdom and now La Consulta is classified as one of Argentinas few Geographic Indication Appellations. Altocedro uses original old vine rootstocks, indigenous yeasts, hundred year old concrete fermentation tanks. This coupled with Karims minimalist
