We cook the pias in brick ovens for two days, then crush them in the tahona mill. The juice is naturally fermented and double distilled in copper alambique stills and laid to rest for 12 months in American white oak barrels. The finished Aejo is an all natural, smooth, amber hued spirit ready to be enjoyed.
